Having lived in Florence 3 times, I know how hard it is to find affordable accommodation, so I thought I'd try to help some of you out by sharing some of my experiences:
You can be very lucky to find adds posted in newspapers or in internet cafe's and hostels. But if you want to be sure to have a place to stay as early after your arrival as possible, there are other solutions:
I went to stay in Florence for 3-4 months in 2005, and started early by seeking room mates on studentsville.it. Soon we were 4 girls from different places in the world, who by luck had to study italian at the same school. The one of us who arrived first, booked a night in a hostel and went straight to one of the rental agencies (immobiliari) in Florence, The one we used was located in Via Guelfa:

Within 1-2 days they found us a huge apartment, 5-10 min from Duomo and the Station, with 3 rooms, 2 living rooms, a dining room, a kitchen, washing mashine, a balcony and 2 bathrooms.
We ended up paying 280 € each/month
This is only an option for people who are willing to share a room, of course... but trust me; it is the best way to build a network in Florence, as we went to different classes and therefore met different people, whom we would all end up knowing due to our living situation.
The agencies charge a 500€ fee, but as long as the stay is for a longer period (my flatmates stayed there for many months without paying any additional fees even though they had new people living with them all the time), I think it's a small price to pay to be sure not to be ripped off. The agency will make sure you have a contract and that everything is legally registrered. Therefore you will need a codice fiscale.
IMPORTANT: Use the Italian agencies, and not the ones specially focused on finding accommodation for foreigners... they will charge you a lot of money for places that are often in a very bad condition. (Been there, done that)!
